Oatmeal and Banana 'Muffins'
I tried making these yesterday. They weren't bad but they weren't great. I did substitute regular yogurt for the called for greek yogurt. I tried to add a bit more oats and bake for a bit longer to make up for that. The flavor was good but it was a very wet dense 'muffin'. I say 'muffin' because it was really more of a breakfast bake than a true muffin. I also didn't put the batter through a blender. I just cranked my hand mixer to high and let it go for a while. The texture was okay for me, a bit chunky though. I think I'll give them another shot and make a few changes. Maybe add a little WW flour or put the oats through a food processor before hand. Chocolate chips are a nice addition as well!
